Split daily checks by role: FOH covers dining room, restrooms, and sidework; BOH covers temps, prep status, fryer oil, sanitizer, and line mise; managers cover briefings, cash, vendor issues, and incident logs.

If a checklist is longer than ~25 critical items per role, you will get checkbox theater. Break it into opening, peak, and closing slices.
